A Salad & A Half

As a stressed student it is easy to fall into the rut of having the same, boring meals all the time – especially during exam period.  I’m embarrassed to admit the number of times in the last few weeks I’ve had porridge, cereal or a grilled cheese for dinner.  But with summer’s arrival and my new abundance of free time, I’ve decided to make it a goal to cook interesting food.  It doesn’t have to be fancy, expensive or take hours to prepare, but just something a little more stimulating then a pita bread with canned tuna!

Last night I made homemade burgers and oven sweet potato fries.  The fries turned out great, although they were a little crispy… I forgot that B had a fan oven. oops.  The burgers were juicy and delicious, although I cooked them under the grill — alas, no BBQ! Better yet, everything took under 30min to prepare and only took about 20 minutes to cook.

Lunch today was also something interesting.  I threw together some prewashed salad, cherry tomatoes, a few segments from a clementine, crumbled blue cheese, chopped walnuts and drizzled some honey mustard dressing on top – et voila! A delicious, healthy salad that had me licking the plate.  And this one took less than 10 minutes to throw together!

Yum...

I loved the sweetness of the cherry tomatoes, orange segments, and dressing contrasting with the sharpness of the blue cheese.  And the added crunch from the walnuts and lettuce was delightful.  I generally like salads, but this was a salad and a half.

So, depending on my motivation and whether or not I can have enough self-control to take a few photos before I devour my dinners, you can look forward to a few savoury recipes this summer.  I hope you enjoy The Interesting Food Project!

A Salad & A Half

Serves 1

Ingredients:

  • plateful of prewashed salad greens
  • handful of cherry tomatoes, washed and halved
  • orange segments from a clementine
  • slice of blue cheese, crumbed
  • 3-4 walnut halves, coarsely chopped
  • honey mustard dressing (I used the Tesco Light stuff – tastes great!)

Directions

  1. Mix together salad greens, tomatoes and orange segments.
  2. Sprinkle blue cheese and walnuts on top.
  3. Drizzle with salad dressing.
  4. Devour.
