Two Ingredient Ice Cream: Caramel & Mars Bar

I first saw this recipe last summer, whilst perusing my favourite baking blogs for other summery treats.  This ice cream recipe immediately caught my eye. It’s only uses two ingredients and requires NO ice cream maker! ‘How is this possible?’ I hear you cry (well maybe you didn’t, but that’s certainly what I shouted). The answer is that it uses two of the best ingredients in the world: condensed milk and whipped cream.

The recipe is almost laughably simple, but the results will blow you away. You mix in your desired ‘additives’ (Cadbury’s Caramel bar and Mars bars in my case) into the condensed milk and then fold it into the whipped cream. Spread into a plastic container et voila! Gorgeous, creamy, sultry ice cream made in about 10 minutes flat. The sky’s the limit in terms of flavours. I can’t wait to share with you my next ice cream attempt – so stay tuned for that one!

I served this ice cream along with the beautiful Rose Cake I made last week. It was very creamy and all of my friends were astounded when I told them it was homemade.

Who says that you can’t enjoy ice cream in winter? I certainly don’t! And I’ll be eating ice cream all winter when it’s this easy to make. :)

Two Ingredient Ice Cream

Ingredients:

  • 1 tin condensed milk
  • 1 tsp pure vanilla extract
  • 500 ml double cream
  • 200g Cadbury’s caramel bar, chopped into chunks
  • 3-4 Mars bars, chopped in chunks

Directions:

  1. Whip the double cream to stiff peaks in a large bowl.
  2. In a medium bowl, mix the condensed milk with vanilla and the chunks of Mars and Caramel bars. You can add as much of it as you like and add anything you like! I can’t wait to try brownie bits or chocolate chip cookie dough.
  3. Gently fold the condensed milk mixture into the whipped cream until evenly mixed. Spread ice cream into a 2 litre container.
  4. Freeze for at least 6 hours or until firm.
